I've had sweet potato fries at a number of restaurants and I love them. This recipe was featured in an article about foods that make your healthier and are baked not fried. I haven't tried them yet but I think the recipe looks very good and easy too.
A note about salt - I recently tried sea salt - it is so much better than regular - it makes a big difference. I was amazed at how much better it is.
2 lbs sweet potatoes, peeled and cut into sticks
2 tbsp olive oil
1 clove garlic minced
2 tbsp chopped fresh thyme leaves
1 tsp salt
Place all ingredients in a bowl & toss.
Spread potatoes on a baking sheet lined with parchment paper and place in an oven pre-heated to 400F and bake for 35-40 minutes until they are cooked through, browned and crispy.
That sounds wonderful. I've made them before but not with these ingredients so I'm going to keep this and give it a shot. Maybe my carnivor hubby will even try them.
