It is a good time of year to learn a new strawberry tip .... this is a Portugese method to used to draw out the juice of the berries.
1 pound of strawberries
1 tsp red wine vinegar
2 tsp sugar
Hull and quarter berries and place in a bowl. Drizzle vinegar over and sprinkle with sugar. Stir carefully to mix. Refrigerate 3-4 hours.
I have never heard of that tip before. I will try it. The berries are fresh from the vine around here. We have growers... "you-pick" places. Strawberry season is done tomorrow. :-(

This is also quite yummy with balsamic vinegar, especially if you can afford some of the really good stuff.
