Sweet Potato Fries

I've had sweet potato fries at a number of restaurants and I love them. This recipe was featured in an article about foods that make your healthier and are baked not fried. I haven't tried them yet but I think the recipe looks very good and easy too.

A note about salt - I recently tried sea salt - it is so much better than regular - it makes a big difference. I was amazed at how much better it is.

2 lbs sweet potatoes, peeled and cut into sticks
2 tbsp olive oil
1 clove garlic minced
2 tbsp chopped fresh thyme leaves
1 tsp salt

Place all ingredients in a bowl & toss.
Spread potatoes on a baking sheet lined with parchment paper and place in an oven pre-heated to 400F and bake for 35-40 minutes until they are cooked through, browned and crispy.

Try these sweet potato fries... or, you can be fat like me and deep fat fry them instead of the lightweight olive oil toss recommended by the health nuts. [Read More]

That sounds wonderful. I've made them before but not with these ingredients so I'm going to keep this and give it a shot. Maybe my carnivor hubby will even try them.

Yummmm...! I will try those. I am not much for sweet potatos but I have feeling my boys will love them. ThanXs :-}

Oh those sound so good. There is a place call Stewert's that sell them. Had them them once. They were good.
