I have been all about food this weekend - perhaps because I decided I needed to diet a bit (having caught a glimpse of my rear view in a mirror while trying on clothes at the mall yesterday). I usually get these epiphanies at least twice a year. The other reason to obsess about food right now - it is spring. The markets are full of great veggies.
Some of the things I've enjoyed since stocking up yesterday - fiddlehead greens, caprese salad, pitas stuffed with hummus/tomatoes/radishes/alfafa sprouts/red onions and swiss chard.
I also bought some rice roll wrappers and vermicelli noodles. I learned to make rice rolls last week - these are fun. The wrappers are completely dehydrated when you buy them. Soak them in water for a couple of minutes then wrap vermicelli noodles and a slice of avocado. Dip them in spicy peanut sauce. They are easy and delicious. Before I tried them I thought they would be very difficult.
We made both rice rolls and spring rolls last weekend - neither are difficult. I enjoyed rolling them - very therapeutic.
Wish my luck dieting this week - with all the veggies in the market, my plan is to fill up on veggies, healthy grains and tofu. And to drink a ton of water.
Hmm, that really sounds delicious. (Even as I am stuffing four hot dogs down my throat.)

Damn I miss fiddleheads!
Used to take a little butter and lemon juice on spring canoe trips in case we could find some.
