Another spring recipe ...
1/2 cup dry red wine
1/4 cup of honey
pinch of ground pepper
2 large ripe plums pitted and sliced (about 1 1/2 cup)
1 cup diced rhubarb (1/2 inch pieces)
Preheat oven to 452f. Place wine, honey and pepper in a small saucepan and bring to a simmer. Place plums and rhubarb in an 8 inch square baking dish. Pour the wine mixture over the fruit. Bake, stirring every 15 minutes until the fruit is tender and the sauce has a syrupy consistency.
This recipe is featured served over a Mascarpone Pudding .... I'll post the recipe for that later.
